Strawberry Trifle

1 angel food cake
1 24 oz lowfat strawberry yogurt
1 large box fat free jello cheesecake pudding mix
8  cups strawberries
1 8ox fat free cool whip

Cut up angel food cake in pieces. Mix yogurt with cheesecake pudding mix(dry) and add 1 cup of cool whip. Cut strawberries in pieces and have everything ready to layer. Layer cake then strawberries and yogurt mixture in trifle or punch bowl. Repeat layers. Top with cool whip. Sprinkle sliced strawberries to garnish.

Skinny Taco Dip

8 oz 1/3 less fat Philadelphia cream cheese
8 oz reduced fat sour cream
16 oz jar mild salsa
1 packet taco seasoning
2 cups iceberg lettuce, shredded
2 large tomatoes, diced
1 cup reduced fat shredded cheddar cheese
2.25 oz black olives

In a large bowl combine cream cheese, sour cream, salsa and taco seasoning and mix well with an electric mixer. Spread on the bottom of a large shallow glass dish.. Top with shredded lettuce, tomatoes, shredded cheese and black olives. Serve with baked tortilla chips.

Veggie Bars

2 8oz fat free cream cheese
2 cans reduced fat crescent rolls
1/2 Package Ranch dressing mix (dry mix)
1 cup broccoli, finely chopped
1 cup cucumber, finely chopped
1 cup tomato, finely chopped

Spray 11 x 15 cookie sheet. Set oven @ 350. Lay out cresent dough on cookie sheet so that it is all pressed together for a flat crust. Bake for 15 min. Soften cream cheese
and mix in ranch mix. Spread over baked crescent roll crust. Top with veggies.
Serve warm or chilled.
Serves 15 @ 4 pts +

Pumpkin Spice Cake

1 Spice Cake Mix
15 oz can pumpkin(plain)
1/2 cup water
1 egg and 2 egg whites slightly beaten
1/2 cup unsweetened applesauce

Pour into 9 x 13 pan, sprayed with pam and bake according to cake mix pkg. directions. Cool completely. then cover and place in fridge for 1 hour,
Slice cake into 2 equal layers

Frosting

Mix 1 cup powdered sugar with 16oz fat free sour cream
Fold in 16 oz fat free cool whip

Frost cake (including between layers) and refrigerate.

Serves 24 @ 4 points plus

Pineapple Casserole

2 - 20 oz cans pineapple chunks (unsweetened juice)
3/4 cup splenda
1 roll reduced fat Ritz crackers
4 Tbsp reduced Bisquick
2 cups fat free cheddar cheese
1/2 cup smart balance butter (melted)

Drain pineapple, reserve juice. Mix splenda and Bisquick together. Stir in juice, add cheese to pineapple. Put in 9 x 13 dish. Crush crackers, stir in butter, put on top of pineapple mixture. Bake @ 350 for 30 min.

Corn Casserole

15 1/4 oz canned corn, drained
14 3/4 oz creamed corn
8 oz Jiffy corn muffin mix
1 cup sour cream
1 stick butter melted
1 1/2 cups shredded cheddar cheese

Preheat oven to 350 degrees.
In a large bowl, stir together corn, corn muffin mix, sour cream and butter.
Pour into a 9 x 13 casserole dish.
Bake for 45 min. or until golden brown.
Remove from oven and top with cheddar cheese.
Return to oven 5 - 10 min. or until cheese is melted.
Let stand for 5 min. Serve warm.

Double Layer Pumpkin Pie

8 oz low fat cream cheese
1 Tbsp skim milk
1 Tbsp sugar
1 1/2 cup fat-free whipped topping
1 (lesss fat) ready graham cracker pie crust
1 cup skim milk
2 sm pkgs instant vanilla pudding (fat/sugar free)
15 oz can Pumpkin
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves

In a large bowl mix together cream cheese, 1 Tbsp milk and sugar until smooth. Gently stir in whipped
topping. spread in bottom of crust.
Pour 1 cup milk in large bowl, thoroughly mix in pudding mix, pumpkin and spices. When thickened spread over cream cheese layer.
Refridgerate 4 hours or until set.

8 servings=6pts+

Crustless Pumpkin Pie

15 oz can Pumpkin
12 oz Evaporated Milk, fat-free
3/4 cup Eff substitute
2 tsp Pumpkin Pie Spice
1 tsp Vanilla extract
1/2 cup Sugar substitute

Preheat oven to 400'> Spray a 9" pie pan with cooking spray. Mix ingredients until creamy and pour into pan. Bake at 400 for 15 minutes, then lower temp to 325 and bake additional 45 minutes or until knife comes out clean.

Apple Bacon Sweet Potatoe Bake

1 large onion
1 1/2 lb sweet potatoes
2 med. apples
1/2 cup apple juice
1 tsp Ground Cinnamon
1/4 cup Pecan Halves (chopped)
4 slices uncooked Turkey Bacon

Heat oven to 375'. Cook onion and bacon in large skillet on med. heat 7-8 minutes or until onions are crisp-tender. Peel and cut potatoes into bite-size chunks, place in 13x9 baking dish sprayed with cooking spray. Add apples, apple juice and cinnamon, mix lightly. Top with onion mixture; cover.
Bake 40 minutes; top with nuts. Bake an additional 15 minutes or until potatoes are tender and most of liquid is absorbed.

Sweet Potatoe Casserole

58 oz can Sweet potatoes, in syrup
2 Tbsp packed Brown Sugar
3 egg whites
1/2 cup skim milk
1/3 cup pecan halves (chopped)
1/3 cup packed brown sugar
2 Tbsp All Purpose flour
1 Tbsp light butter

Drain and mash sweet potatoes; combine with 2 Tbsp brown sugar. Stir in egg whites and milk.
Transfer to a greased 3 1/2 quart slow cooker. Combine pecans, 1/3 cup brown sugar, flour and butter. Spread over sweet potatoes. Cover and cook on high 3-4 hours.

Corn Pudding

15 oz Cream Style Corn
30 oz can Yellow Corn (drained)
1/2 cup Splenda Sweetner
1/2 cup All-Purpose Flour
1 tsp Salt
1 cup fat-free Eff substitute
1 1/2 cup Skim Milk

Preheat oven to 450'. Spray 1 1/2 qt baking dish with cooking spray. In medium bowl, combine cream-style and yellow corn. Stir together splenda, flour and salt; add to corn. Stir in egg and milk. Bake 45-50 minutes.

Cranberry Salad

2 cups Cranberries
2 cups water
1 cup splenda
1 pkg sugar free jello (raspberry or cherry)
1 cup celery
7 1/2 oz crushed pineapple in its own juice
1/2 cup walnut halves

Bring cranberries and 1 cup water to boil. Remove when cranberries have popped open. Add splenda and stir.  Set aside to cool. Dissolve jello in 1 cup boiling water. Add cranberry sauce, mix thoroughly. Add celery, pineapple and walnuts.Pour into a mold, place in frige until set, usually overnight.

Roasted Brussel Sprouts with Maple Balsamic Drizzle

2 lbs Brussel Sprouts, trimmed
2 Tbsp Olive Oil, extra-virgin
2 1/4 tsp Kosher Salt, divided
1/4 tsp Black Pepper
3 Tbsp Balsamic Vinegar
2 Tbsp Maple Syrup

Preheat oven to 450'. Coat a large nonstick baking sheet with cooking spray.
Slice Brussel Sprouts in jalf, if large; place on prepared baking sheet. Add oil, 2 tsp salt and pepper; toss well to coat. Roast, stirring and rotating pan halfway through cooking, about 20 minutes.
Combine vinegar, maple syrup and remaining salt in a small saucepan; set over med-high heat. Boil, stirring frequently, until thick and syrupy, about 3 minutes.
Spoon Brussel Sprouts into a serving dish; drizzle with syrup mixture just before serving.

Cranberry Sauce

12 oz Cranberries
2/3 cup Splenda Sweetener
1 cup Water
1/4 cup Sugar
1/8 tsp Ground Cinnamon

In Medium size pot, combine water, splenda, and sugar over medium high heat until dissolved, Then add cranberries and cinnamon. Bring to a boil. When cranberries start to pop, Stir gently and remove from heat. Transfer cranberry sauce into a serving dish and place in fridge to chill.

Macaroni Salad

4 1/2 cup cooked macaroni
3/4 cup fat free mayonnaise
1/4 cup fat free sour cream
3 tbsp sweet relish
1 med sweet red pepper, diced
1 med green pepper, diced
1 med carrot, diced
1/4 c red onion, diced
1/8 tsp salt and pepper

While macaroni is still warm, add mayonnaise,sour cream and relish; toss to coat. Add peppers, carrot and onions; toss to combine. Season to taste with salt and pepper. Serve warm or chilled.

Marvelous Melon

1 large Cantaloupe
1 pkg (3oz) sugar free strawberry jello
1 cup boiling water
1/2 cup unsweetened applesauce
1 cup sliced fresh strawberries

Cut melon in half lengthwise from bud to stem end; discard seeds, Cut a slice off the bottom of each half so melon sits level; pat dry. In a bowl. Dissolve jello in boiling water. Stir in applesauce and strawberries. Pour into melon halves. Cover with plastic wrap and refrigerate overnight.

Ice Cream Dessert

2 tubes lowfat ritz crackers
3/4 cup fat free butter
3 pkgs fat free Instant Chocolate Pudding
1 1/4 cup fat free milk
1/2 gallon Healthy Choice lowfat Chocolate Ice Cream
8 oz cool whip fat free

Make crust with Ritz Crackers and 3/4 c butter
Put into 9x13 dish. Mix pudding mix with milk, stir in 1/2 gallon softened ice cream.
Pour over top of crust. Spread 8 oz cool whip over mixture. Put in freezer set out 10 minutes before serving.
 Also try substituting : Lowfat Cinnamon Graham Crackers, Strawberry Pudding and Strawberry Ice Cream

Banana Splits

2 full sheets of low-fat cinnamon graham crackers
1 medium banana
1 fat free vanilla pudding cup
4 tbsp fat-free cool whip
1 maraschino cherry

Slice 1/2 the banana over each cracker. Spoon 1/2 the pudding over the banana slices on each cracker. Top pudding w/2 tbsp fat free cool-whip and 1/2 maraschino cherry.

Chicken Fajitas

8 Med fat-free flour tortilla(s) reg. or wheat
2 tsp olive oil
1 pound marinated chicken breast strips
1 lb. frozen fajita vegetables
1/2 cup fat-free sour cream
1/2 cup salsa

Preheat oven to 300' warm tortilla
10 min. heat oil, add chicken and saute' until cooked. Transfer chicken to a serving plate.  In smae skillet saute' frozen vegetables. Serve vegetables and chicken with warm tortillas, sour cream and salsa

Luscious Lime Angel Spuares

1 pkg (3oz) Sugar Free Lime gelatin
1 cup boiling water
1 prepared Angel Food Cake (8 inches), cut into 1 inch squares (cubes)
1 pkg (8oz) reduced-fat cream cheese, cubed
1/2 cup sugar
2 tsp lemon juice
1 1/2 tsp grated lemon peel
1 carton (8oz) reduced-fat whipped topping, thawed

In a bowl, dissolve gelatin in hot water. Refrigerate until mixture just begins to thicken, about 35 min. Place cake cubes in a 9x13x2 dish, coated with nonstick spray;set aside. Mix cream cheese until smooth. Beat in sugar lemon juice and peel. Add gelatin,  beat until combined. Fold in l 1/2 cups topping. Spread over cake, covering completely. Refrigerate at least 2 hrs. Top with remaining topping.

Apple -pie like snack

1 apple sliced thin
2 tsp cinnamon
spray pam (butter flavor)
2 packets splenda (or equal)
Place apple slices in a microwave safe dish, Coat each layer with a spray of butter pam, generous sprinkle of cinnamon and splenda. Once all layers are coated, cover dish with lid or cling wrap. Microwave on medium for 1 min. 30 sec. and on med-high for 1 min. 30 sec. or until apple slices are tender.

Mandarine Orange Dessert

1 cup Mandarin Oranges, drained
1 cup boiling water
1/2 cup cold water
1 small box sugar free orange jello
1 cup crushed pineapple in own juice
1 cup fat free whipped topping
1 cup low fat plain Yogurt

Combine jello and hot water and stir until jello is dissolved.
Add cold water, pineapple and mandarin oranges. Chill  until almost set.
Combine whipped topping and yogurt. Fold into jello mixture, Chill for 3 hours

Vega Lasagna

1 jar 28 oz Ragu Lite No Sugar Basil Tomato Spaghetti Sauce
6 Dry Lasagna Noodles
1-15 oz Fat -free Ricotta or Cottage Cheese
2 cups shredded healthy choice mozzarella cheese
1-10 oz Frozen Chopped Spinach-thawed and squeezed dry
1 cup shredded carrots-steamed lightly

Mix Ricotta or Cottage Cheese with Spinach and carrots. Set aside. In 9x13 pan , spread 1 cup sauce, place 3 noodles side by side and top with cheese mixture

Vega Lasagna

Red Lobster Cheddar Biscuits

2 cups Bisquick, reduced fat baking mix
3/4 cup low fat buttermilk (1% fat)
1 cup shredded low fat cheddar cheese
2 tbsp fat free butter spray
1/4 tsp garlic powder
1/2 tsp dried parsley, crushed fine

Preheat oven 400' Combine bisquick, buttermilk and cheese. Mix until well combined. Divide dough into 12 equal portions (about 3 tbsp) and spoon on sprayed pan. Flatten each biscuit slightly. Bake 18-20 minutes. Combine butter spray garlic and parsley, heat mixture in microwave 30 sec. then brush a light coating over tops of biscuits.

Potato Casserole

1 small onion
1 cup reduced fat cheddar cheese
2 tbsp margarine
1/2 tsp pepper
1 (32 oz) pkg, Southern-style Hash Browns
16oz Container of Fat-Free Sour Cream
1 (10oz) Can Reduced Fat Cream of Mushroom Soup
Pam cooking spray
Spray 9x13 baking dish. Combine all ingrediants
Bake agt 350" for 1 hour

Strawberry Pie

1 sm. pkg. Sugar-free Cook and Serve Vanilla Pudding
2 cups water
1 pkg. Sugar-free Strawberry Jello
4 cups Sliced Strawberries

Bring pudding and water to a boil. Remove frok heat, add jello and stir until dissolved.
Put strawberries in a deep dish pie plate.
Pour mixture over strawberries.
Refrigerate

Pineapple Glazed Carrots

1 1/2 lbs. carrots, peeled and cut into 1/4"
1/2 cup unsweetened pineapple chunks, drained and juice reserved.
2 tsp unsalted butter
2 tsp lemon juice
2 tsp cornstarch
Place carrots in teamer basket over boiling water. Cover and steam 6-7 minutes or until almost tender. Drain carrots, return to saucepan. Combine pineapple, butter, lemon juice and salt to taste in a bowl. Add to carrots. Stir and simmer over low heat until mixture is heated. Mix cornstarch 1/4 cup juice, add to carrots. Stir until thickens.

Five Can Soup

1 (14.5 oz) can Del Monte Fresh Cut Whole New Potatoes cubed, drained
1 (14.5 oz) can Del Monte Fresh Cut Sliced Carrots, drained
1 (14.5 oz) can Del Monte Fresh Cut Zucchini with Italian-style Tomato Sauce
1 (14.5 oz) can Del Monte Fresh Cut Diced Tomatoes with Basil, Garlic and Oregano
1 (14 oz) can Chicken or Beef Broth

Combine all ingredients in large pot. Bring to a boil; then reduce heat and simmer 3 minutes. Season to taste with salt and pepper

Grilled Tri-Colored Pepper Salad

Fresh Basil leaves
1 each large red, yellow and green bell pepper, cut into halves or quarters
1/3 cup extra-virgin olive oil
3 Tbsp balsamic vinegar
2 cloves garlic, minced
1/4 tsp salt
1/4 tsp black pepper
1/3 cup crumbled goat cheese (1 1/2 oz)

Prepare barbecue grill for direct cooking
Layer basil leaves with largest leaf on bottom, then roll up jelly-roll style. Slice basil roll into very thin slices; separate into strips. Slice enough leaves to measure 1/4 cup. Set aside.
Place bell peppers, skin-side down, on grid. Grill bell peppers, on covered grill, over hot coals 10-12 minutes or until skin is charred.
To steam bell peppers and loosen skin, place charred bell peppers in paper bag. Close bag; set aside to cool 10-15 minutes
To peel bell peppers, remove skin with paring knife; discard skin.
Place bell peppers in shallow glass serving dish, combine oil, vinegar, garlic, salt and black pepper in small bowl; whisk until well combined. Pour over bell peppers, Let stand 30 minutes at room temp.
Sprinkle bell peppers with cheese and basil just before serving.     Makes 4-6 servings

King Ranch Chicken

1 Chicken (cooked and boned)
1 can Cream of Chicken soup
1 can Cream of Mushroom souop
1 small onion
Grated cheese
1/2 pkg Corn tortillas
1 can Rotel tomatoes
1 bell pepper
2 Tbsp Chili powder

Saute onion and pepper in a small amount of oleo. Add soups and tomatoes and heat. In a large baking dish, layer tortillas, soup mixture, and chicken. Top with cheese. Bake for 45 minutes at 375 degrees.Bake covered until almost done. Remove cover and return to oven to brown cheese.

Tortilla Pizza

Place tortilla in oven, let it get crispy
Remove oven
Put pizza sauce and cheese on tortilla
Return to oven to melt cheese

Tortilla Wrap

1 tortilla or wrap
1/2 lavash bread
1 wedge laughing cow or Wright Watchers cheese
Chopped veggies-tomatoes, onions, peppers, lettuce-any O points veggies
Spread cheese on wrap
Add veggies and roll up.

Chicken Endhiladas

4 chicken breats
1 bunch cilantro, chopped
1 cup heavy cream
1 tsp. cumin
1 can (10oz) greem chili enchiladas sauce
1 jalapeno pepper, seeded and chopped
1 pkg (8ct) flour tortillas
1 pkg (8oz) shredded cheese

Cut chicken into cubes and saute in a lightly oiled skillet with 1/2 of the green onions, 1/2 of the cilantro,
and cumin. Add 1/2 of the can of enchiladas sauce and simmer until the chicken is tender. Season to taste with salt and pepper.
In a heavy sauce pan, combine the heavy cream and jalapeno pepper. Bring to a boil then reduce heat and simmer until cream has reduced to half its volume.
Spread the remaining enchiladas sauce in the bottom of a 9x13 inch casserole pan. Roll chicken mixture and
shredded cheese in each tortilla and place, seam down, in the casserole pan. Pour cream sauce over enchiladas and top with shredded cheese.
Bake in a 350 degree oven until bubbly and cheese is lightly brown. Garnish with remaining green onions and serve.

Triple Chocolate Bundt Cake

1 box chocolate cake mix
1 small box f f sugar-free instant chocolate pudding
1 small box f f sugar-free instant white chocolate pudding
1 cup water
1 cup applesauce
1 cup egg substitute
1/2 cup chocolate chips

Mix together and pour into a bundt pan that has been sprayed with cooking spray.
Bake in a 350 degree oven for 45-50 min.
May use other types of cake mix and puddings

Fruit Dip

2 Containers of cool whip
1 big box or 2 small boxes of instant sugar free cheesecake pudding

Mix cool whip and pudding together until well blended.
Serve with fruit.

Pie


Fat free granam cracker crust
1 sugar free fat free vanilla pudding mix with fat free milk
top with low fat whipped cream
top with strawberries and pineapple

Kool Aid Pie

1 ready made graham cracker crust
1 (14 ounce) can sweetened condensed milk
1 ( 0.15 ounce) envelope unsweetened Kool-Aid (any flavor)
8 ounces Cool Whip, thawed

Mix sweetened conensed milk, Kool-Aid and Cool Whip. Blend well.
Pour into crust. Refrigerate. Ready to eat within minutes.

Sesame Green Beans

1lb fresh green beans
3-4 Tbsp sesame oil
1/4 cup soy sauce
2 Tbsp ginger/garlic blend
2 Tbsp sesame seeds
1/2 tsp cumin (opt)

Bread Pudding Pie

1 1/2 cup silk Almond milk
1 cup egg sbustitute
1 cup splenda
1/2 tsp cinnamon
1 tsp vanilla (almond)
4 slices lite bread cubed
1/2 small box of raisins
pinch of salt

Whisk together milk, eggs, splenda and spices-
Stir in cubed bread and raisins, Spray baking dish. Pour into 9" pie plate or 7 x 11 pan
Bake 10 minute at 450 then 30 minutes at 350.
Serve with cool whip.

Zuchinni Parmesan

Zuchinni slices
onion slices
green pepper slices
maranara, jarred pasta sauce
parmeaean

Pam a casserole, add a layer of
zuchinni,  onion, pepper and cover with maranara.. Repeat layers and sprinkle with parmesan.
Bake at 350" for 30 minutes.

Mississippi Mug Cake

8-10 oz mugs
3 Tbsp Devil Food Cake mix
1 Tbsp egg sub. or egg white
1 pkg diet cocoa (20-25 cal)
2 Tbsp water
1 tsp mini choc chip
1/3 Pudding snack-sugar free

Mix in mug
Microwave 1 min
Bring out of microwave add additional pudding snack microwave for 1 minute more
top with cool whip

Zucchini Jam

6 cups shredded Succhihi-peeled and seeded
6 cups Splenda
1-20oz crushed pineapple
1/2 cup lemon juice
6 oz pkg. jello (any flavor)

Cook zucchini and sugar after it comes to a boil for 6 minutes.Add pineapple and lemon juice.
Cook 8 minutes after boil, add jello cook 1 minute. Process in hot bath for 10 minutes.

Eggplant Hummus

1 large eggplant
1 can chickpeas
minced garlic
lemon juice
spices of choice

Prick egglant all over with fork. Microwave on high for about 10 minutes, or until very soft in center. Remove from microwave and cut in half lengthwise and allow to cool.  Drain chickpeas and put in food processor, Scoop out cooled flesh of eggplant into food processor. Add garlic to taste (I add about a tablespoon of minced garlic), a teaspoon (or to taste) of lemon juice and your choice of spices...I usually add a bit of cayenne pepper to kick it up. Blend until smooth. Refrigerate and enjoy.

Potato Salad

1-32oz bag Hash Browns
1/4 cup water
2 tsp cider vinegar
1 tsp mustard
1 1/2 tsp salt
1/2 tsp pepper
5 egg whites (chopped)
1 cup fat free mayonaise  * substitute - 2/3 cup light mayo
1/2 chopped celery
1/2 cup chopped onions

Microwave potatoes in 1/4 cup water for 15-20 minutes. Stir 1/2 way, cook until tender.
Add vinegar, mustard, salt and pepper to hot potatoes. Refrigerate until cold. Stir in celery, mayo,
onions, egg whites, sprinkle with paprika if desired. Refrigerate and serve

Strawberry Pie

2 cups sliced strawberries
2 Tbsp cornstarch
1 pkg sugar free Strawberry jello
3 Tbsp sugar
1 1/2 cups water
1 redused graham cracker crust
2 cups fat free cool whip

Mix cornstarch and water till smooth
Bring to a boil. Stir in jello and sugar till dissolves.
Stir in berries. Pour in pie curst. Refrigerate till  pie sets.
Spread cool whip on top and garnish with berries

Microwave bread and butter pickles

2 cups sliced cucumbers
1 cup sliced onions
1/2 tsp salt
1/4 tsp celery seed
1 cup Splenda
1/2 cup white vinegar
1/2 tsp mustard seed
1/4 tsp turmeric

Mix all inderdients together then cover with plastic wrap.
Microwave on high 4 min.
microwave 4 more min.

KFC Cole Slaw Clone

1 cup fat-free Miracle Whip
1/4 cup sugar
8 cups cabbage, finely minced
2 Tbsp carrots, shredded, then minced
2 Tbsp. minced onion

Combine miracle whip with sugar until sugar is disolved.
Add remaining ingredients.

Mix well. Cover and chill several hours.

Cucumber Tomato Salad

1/2 Cup rice vinegar All Natural  0 pts
4 packets Splenda
3 cups of unpeeled sliced cucumbers
2 cups chopped tomato
1/2 cup chopped red onion
Salt and pepper to taste

Combine vinegar and splenda. Add cucumbers, tomato and onion; mix well. Season to taste with salt and pepper.
Refrigerate, cover 1 to 2 hours.

Do It All Marinade

3/4 cup Olive Oil
1/2 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup balsamic vinegar
2Tbsp lemon juice
2 Tbsp Dijon mustard
1 tsp pepper
3 cloves garlic, finely chopped
1 Tbsp finely chopped fresh parlsey

Whisk all ingredients together. Pour marinade over chicken, steak or pork;
cover and chill meat for at least 5 hours. Remove meat from marinade, discarding marinade. Pat meat dry and cook as desired.

Eggplant Parmigiana

cooking spray
1/3 cup seasoned bread crumbs, Italian-style
1 Tbsp grated Parmesan cheese
1 tsp Italian seasoning
1/4 tsp garlic powder
1 medium raw eggplant
2 large egg whites, lightly beaten
1 1/2 cups canned tomato sauce
1/2 cups part skimmed mozzarella cheese, shredded

Preheat oven to 350' Coat a 9 x 13 inch baking dish with cooking spray. Set aside.
Combine bread crumbs, Parmesan cheese, Italian seasoning and garlic powder in a medium-size bowl; set aside. Remove skin from eggplant and trim off ends; slice eggplant into 1/2inch-thick slices.
Dip eggplant first into egg whites and then into bread crumb mixture. Bake eggplant on a nonstick cookie sheet until lightly browned, about 20-25 minutes, flipping once.
Place a layer of eggplant on bottom of prepared baking dish, then add 1/3 of tomato sauce and 1/3 mozzarella cheese. Repeat withh 2 more layers in same order. Bake until cheese is melted and sauce is bubbling, about 10 minutes more. Slice into 4 pieces and serve.

Skillet Cabbage

2 Stalks celery
1 onion
1/2 head cabbage,shredded
1/2 green pepper, chopped
1 medium tomato, chopped
1 1/2 tsp vegetable oil
1/2 tsp salt
1/4 tsp pepper

Wash and chop celery into small pieces.
Cut ends off of onion and peel off brown layers. Chop into small pieces.
Heat oil in a large non stick frying pan over medium-high heat
Add celery and onion and cook until soft, 4-7 minutes.
Add cabbage, green peper, salt and pepper. Cook for 5-10 minutes, stirring often so cabbage wilts.
Add tomato and serve immediately.

Banana Strawberry Shake

1-1/4 cups frozen unsweetened strawberries
1 large ripe banana
1/2 cup 2% milk
3 Tbsp Splenda
Combine all ingredients in blender. Blend on medium speed till smooth.

Spinach Salad Dressing

2 tsp chopped onion
1 tsp salt
2Tbsp butter (melted)
2 tsp mustard
8 Tbsp Olive Oil
1/2 tsp lemon juice

Melt butter, combine rest of ingredients
Sprinkle bacon bits or crumbled bacon on chopped spinach. Add dressing.

Squash Casserole

2 lbs. Yellow Squash
1 lb Zuchini
2 onions
3 sliced tomatoes
Dry Itallian Dressing (sprinkle over)
Put in layers
Bake covered 45 min @ 350' and uncovered for 15 min
sprinkle with Parmesan cheese.

Zesty Winter Carrots

6 Carrots
2 Tbsp horseradish
2 Tbsp grated onion
1/2 cup mayonaise
1 tsp salt
1/4 tsp pepper
1/4 cup water
1/4 cup bread crumbs
1 Tbsp margarine

Scrape carrots. Cut into thin strips . Cook in water until tender. Drain. Place in 6 x 10 baking dish.
Combine horseradish, onion, mayo,salt, pepper, and 1/2 cup water in bowl. Mix well. Pour over carrots. Mix bread crumbs and margarine. Sprinkle with bread crumb mixture. Bake at 375 for 15 min.

Chicken with Watermelon Salsa

2tsp canola oil
1tsp fresh lime juice
4 (4oz) boneless skinless chicken breasts

Watermelon Salsa
2 cups diced watermelon
1/2 cup diced yellow bell pepper
3 Tbsp chopped fresh cilantro
2 Tbsp fresh lime juice
1 Tbsp diced red onion

To prepare chicken, in cup or small bowl combine oil and lime juice; brush chicken breasts with
oil mixture. Grill or broil chicken until cooked through and juices run clear.
Meanwhile, in medium bowl combine salsa ingredients, mixing well.
Place 1 cooked chicken breast on each of 4 plates; top each with 1/4 of the salsa.

Zucchini Carrot Cake Mix

1 Pkg Carrot Cake Mix
1 egg
1/2 c applesauce
1/4 c Vegetable Oil
1 1/2 c shredded Zucchini
1/2 c Raisins
1/2 c chopped Pecans

In a mixing bowl, combine the cake mix, egg, applesauce and oil; mix well.
Stir in the zucchini, raisins, and pecans. Fill greased or paper-lined  muffin cups 3/4 full.
Bake at 350 for 25-30 minutes or until muffins test done.

Garbonzo Salad

1 large head lettuce (torn into small pieces)
2 medium tomatoes (diced)
1 small onion (diced)
1 can kidney beans (drained)
1 can garbanzo beans (drained)
2 cups Fat Free Shredded Cheese
1 1/2 Cups Wish Bone Light Ranch Dressing
6oz (half a Bag) Baked Doritos (crushed)
Mix together; lettuce, tomato, onion, kidney beans, garbonzo beans and cheese.
Add light ranch dressing. Add crushed Doritos when ready to serve.

Serves 15 @ 5 Points Plus values each.

Veggie Wheels

1 medium low fat flour tortilla
1/4 cup chopped red bell peppers
1/2 cup fresh spinach (stems removed)
1Tbsp chopped tomatoes
1Tbsp chopped scallions
1Tbsp fat-free cream cheese
1/4 teaspoon ranch seasoning mix, dry

In a small bowl,combine cream cheese and ranch seasoning until smooth
and mixed thoroughly. Microwave tortilla until slightly warm. Spread evenly with
cream cheese mixture on top. Place spinach, red peppers, scallions, and tomatoes evenly
over cheese layer. Very tightly roll the tortilla and secure in plastic wrap, place in fridge for
at least 1 hour. When ready to eat, remove plastic wrap and cut off both ends of wrap. Slice
 the rest of the wrap into 6 circular pieces.

Imitation Coconut Custard Pie

2 c. fat-free Skim Milk
6 Tbsp White All-Purpose Flour
2 tsp Baking Powder
1/4 tsp salt
1 c. Egg Beaters
2 Tbsp Light Margarine
1 tsp Vanilla Extract
11/2 tsp Coconut Extract
1c. Splenda
1c. cooked Spaghetti Squash

Put all ingredients (except squash) into a blender or food processor. Blend or process for
3 minutes or until smooth. Stir in squash. Pour into 9" or 10" pie plate. Needs no crust, it makes its
own.  Bake at 350 for 40-45 minutes or until knife or toothpick comes out clean.

Mallow Bites/All Bran/P-Nut Butter/Candy

1 2.5 oz pkg Kraft Jet Puffed Mallow Bites
3/4 c. All Bran Wheat Flakes
1/4 c. All Bran "Bran Buds"
1tsp. Better'n Peanut Butter

Melt Mallow Bites in microwave 20-30 seconds
Add All Bran cereals and Peanut Butter and microwave
another 20 seconds. Mix and spoon onto foil. Refrigerate.
Approx. 20 servings

Bit Rollers

4oz fat-free cream cheese
1/4 c. light mayo
8 slices bacon cooked and crumbled
1/2 c. chopped tomotoes
2 (8inch) Tortilla Wraps (xtreme wellness high fiber)
1/2 c. shredded romaine lettuce

Mix cream cheese and mayo; add bacon and tomatoes
Spread onto tortillas; top with lettuce; roll tightly; Cut into 7 slices
Prep time 15 min. Makes 14 servings

Mexican Style Brown Rice Casserole

1 spray cooking spray
4 cups cooked brown rice
1 1/4 cups fat free salsa
1 tsp ground cumin
15oz cooked refried beans
10oz frozen corn kernels, thawed
4oz canned mild green chili peppers, diced
1Tbsp chili powder
10oz frozen spinach, or collard greens. thawed and set to drain in a strainer
over a bowl
3/4 cup low-fat shredded cheddar cheese, divided
2Tbsp fresh, chopped cilantro

Preheat oven to 375' Coat a 2 quart rectangular, round or oval baking dish with cooking spray.
In a large bowl, combine rice, salsa, and cumin. Spoon 2 cups of rice mixture into prepared
baking dish and spread out to evenly cover bottom of dish.

In another large bowl, combine refried beans, corn, chili peppers, and chili powder.
Using a rubber spatula, scrape bean mixture on top of rice layer and smooth out top.

Squeeze out any excess water from spinach or collard greens and then spread on top of bean layer;
sprinkle with 6 tablespoons of cheese. Top with remaining rice mixture and smooth out top; Sprinkle with remaining cheese.

Place casserole on a large rimmed baking sheet to catch any spillage. Bake until heated through
and cheese is browned and bubbling, about 30 minutes. Sprinkle with cilantro. 

Slow Cooker Barbecue Chicken

24oz boneless, skinless chicken breasts
3/4 c. barbecue sauce
3/4 c. reduced-fat Italian dressing
2 Tbsp. packed brown sugar
1 Tbsp. Worcestershire sauce
2 Tbsp Cornstarch
2Tbsp. low sodium chicken broth

Put chicken in slow cooker, In a bowl. combine barbecue sauce, dressing, brown sugar
 and Worcestershire sauce. Pour over chicken, Cover and cook on low for 5 hours.

Remove chicken to a cutting board and shred with 2 forks. In a small bowl, mix cornstarch and
 chicken broth. Stir into sauce in slow cooker, cover and cook until sauce is thickened and heated
through, 5 to 10 minutes. Return chicken to cooker, stir, cover and continue cooking on low for 
25 minutes. Serve chicken on whole-grain buns, over brown rice or with baked potatoes if you like.

Strawberry Cake

1 pkg white cake mix
1 pkg (.3 oz) sugar-free strawberry jello
4 egg whites
1/3 c. canola oil
1 c. frozen strawberries, thawed
1/2 c. water

Icing:

1/3 c. butter, softened
2-1/3 c. powdered sugar
3 T. strawberry juice (from mashed berries)

Line two 9 inch round cake pans with wax paper. Spray with nonstick spray.
In a large bowl, beat cake mix, jello, egg whites and canola oil. Mash strawberries and
reserve 3 T. for icing.
Add remaining mashed strawberries and water and mix well.Pour into prepared cake pans
and bake at 350 for 20-25 minutes or until a toothpick inserted near the center comes out
clean. Cool in pans for 10 minutes and then remove to wire racks to cool completely.

For icing, beat powdered sugar, butter and strawberry juice. Frost cake. Makes 16 servings.

Crab Salad

8 servings immitation crab
1/2 cup celery
1/3 serving(s) green onion
12 serving(s) Mayo, 2Tbsp low fat (Hellmans)

Mix all inderdients together for a delicious crab salad to
have on Melba Snacks or on toast.

1/2 cup crab salad = 3pts

Butterbean Corn and Tomato Salad

15oz (1 can) butter beans, drained and rinsed
15oz (1 can) corn, drained and rinsed
1 medium tomato, chopped
One small onion, chopped
1/3 cup fat-free Italian salad dressing

Open cans of corn and butter beans and place
in a colander. Rinse under running water to remove sodium.
Allow to drain and put in a large bowl.

Cut ends off of onion and remove brown layers. Chop into small
pieces. Add to bowl.

Cut core out of tomato and chop into small pieces. Add to bowl.

Pour dressing over vegetables and toss.

Can serve hot or cold.

Raspberry Fluff

32oz carton Dannon Lite n Fit Vanilla Yogurt
1oz pkg instant sugar free/fat free vanilla pudding mix
12oz tub Cool Whip Free, thawed
1pkg frozen unsweetened raspberries

Whip together about half the yogurt and the pudding mix til smooth.
Stir in the rest of the yogurt and the Cool Whip. Fold in the frozen
raspberries. Refrigerate a couple hours to give the raspberries time to thaw.

14 servings 2 points plus per half cup serving.

Grilled asparagus medley

1 lb. fresh asparagus, trimmed
1 each-red, green, yellow pepper, julienned
1 cup sliced fresh mushrooms
1 medium tomato, chopped
1 medium onion, sliced
1 can (2-1/4 oz) sliced ripe olives, drained
2 garlic cloves, minced
2 Tbsp olive oil
1 tsp minced fresh parsley
1/2 tsp salt
1/2 tsp pepper
1/4 tsp lemon-pepper seasoning
1/4 tsp dill weed

In a disposable foil pan, combine begetables, olives and garlic, drizzle
with oil and toss to coat. Sprinkle with parsley, salt, pepper, lemon-pepper
 and dill; toss to coat. Grill, covered, over indirect medium
heat for 20-25 minutes or until vegetables are crisp-tender, stirring occasionally.

Kraut Salad

1-28 oz bag of kraut (rinse and drain well)
1 cup chopped onion
1 cup chopped green pepper
1-8 oz can white water chestnuts or celery.
1/2 cup red pepper chopped

Heat   3/4 cup sugar, 1/2 cup vinegar, 1/2 cup oil. Cool.
Pour over vegetables and toss. Makes a lot , but will last for days.

Bruschetta di Italiano

1 1/2 Cups seeded and chopped tomatoes
3 tbsp finely shredded Parmesan cheese
2 tbsp sliced green onion
1 tbsp 100% Extra virgin olive oil
1 tbsp chopped fresh basil
1 tsp lemon juice
1/2 tsp minced garlic
1/4 tsp pepper

Combine in medium bowl, tomato, cheese, onion, olive oil,
basil, lemon juice, garlic and pepper. Serve with Keebler Town
House Flatbread Crisps.

Deep Dish Pizza Casserole

1 pound ground ground beef
1 (15oz) can Italian-style tomato sauce
1 can Italian-style tomato, chopped and drained
1 10oz can refreferated pizza crust dough
1 bag preshredded part skim mozz. cheese

Cook meat and drain, add sauce and tomatoes.
Cook until heated

Coat a 9x13 baking dish with cooking spray, Unroll pizza
dough and press into bottom and halfway up sides.  Top with meat
mixture onions, mushrooms, green peppers,etc.

Bake uncovered at 425' for 12 min.
Top with cheese and bake for 5 min. until crust is brown and cheese melts.

Mexican Layer Dip

1 large bag baked tortilla chips   1 cup fat free shredded cheddar cheese
1 can fat free refried beans          3/4 cup chopped greem onions
1/2 packet of taco seasoning       1 can of chopped black olives
1 jar of your favorite salsa           2 chopped tomatoes
8 oz fat free sour cream               1 chopped bell pepper
1 bag of shredded lettuce            1 chopped onion

Pour bottle of salsa into a colander that is sitting in a bowl or in the sink.
Let it drain for at least 10 minutes. Put the sour cream in a bowl and add
1/2 the packet of taco seasoning. Add more taco seasoning to taste.
Spread the refried beans on the bottom of a flat bottom glass or wood serving dish.
Metal will react with the acids in the salsa.  Add the drained salsa, then the sour cream mixture,
add a layer of chopped olives, then add lettuce,tomatoes, chopped green onions, peppers
and cheese.

Walk-It Challange Recipe Blocco-ful Cheesy Stuffed Chicken

1 tray Green Giant Just for One Broccoli & Cheese Sauce
1 wedge The Laughing Cow Light Creamy Swiss cheese
Two 5-oz raw boneless skinless lean chicken breast cutlets, pounded to 1/2 inch thickness
1/8 tsp. salt
1/8 tsp black pepper

Directions

Preheat oven to 350 degrees. Spray a baking pan with nonstick spray and set aside.

Prepare broccoli and cheese sauce accoring to package instuructions. Once tray is cool enough to handle, stir in cheese wedge, breaking it into pieces as you add it. Mix well.

Place chiken cutlets flat on a clean and dry surface, side by side; seasib wutg sakt abd bkacj oeooer, Evenly spoon cheesy broccoli into the centers of the cutlets. One at a time, roll up cutlets around the filling; secure with toothpicks, if needed.

Place chicken rolls in the baking pan. Cover the pan with foil and bake for 20 minutes.

Carefully remove foil and return pan to the oven, uncovered, to bake until chicken is cooked through, about 15 minutes.

Let cool slightly, remove toothpicks.

Walk-It Challange Recipe Corn Bake

Preheat the oven to 400. Spray a 9x13-inch baking dish with nonstick spray.

Mix 2 cups fresh corn kernels.1-14oz can cream-style corn, 1 (18-oz) box corn muffin mix, 1 cup low-fat buttermilk, and 2 Tbsp. light stick butter, melted, in a large bowl.

Pour the batter into the prepared baking dish, Bake until golden and a toothopick inserted into the center comes out clean, about 40 minutes.

10 servings
4 points plus

Walk-It Challange Recipes Macaroni Salad

Salad

6 ounces (1 1/2 cups) uncooked elbow macaroni with at least 2g fiber per 2-ounce serving
2 cups dry broccoli cole slaw
1 cup chopped celery
1 cup chopped red bell pepper
1/4 cup chopped onion
2 tablespoons sweet relish
6 large hard-boiled egg whites, chopped

Dressing

1/4 cup plus 2 tablespoons fat-free mayonnaise
1/4 cup Dijon mustard
1 1/2 tablespoons white vinegar
1/8 teaspoon black pepper,or more to taste
1/8 teaspoon salt. or more to taste
1 no-calorie sweetener packet

Directions
In a large pot, prepare macaroni according to package instructions. Drain well and transfer to a large bowl. Allow to cool completely. Combine all ingredients for dressing in a medium bowl until blended. Set aside.

Add all remaining salad ingredients to the bowl with the cooked macaroni. Add dressing and toss to coat, Refrigerate for at least 1 hour, until completely chilled.

Makes 8 servings
